When the weather turns chilly, something warm and savory is called for, right? That's why I scoop my fall pumpkins off the porch (or heck, just open that can), and into the sauce pan...with a few essential ingredients, of course.
The gorgeous orange color of this soup calls for an equally vibrant piece of servingware. I'm pretty partial to our beautiful handcrafted Mexican Talavera pottery from our Amapola Collection.
RUSTICA SAVORY SOUP RECIPE
Saute onion and minced garlic in butter until onion in soft, using a large sauce pan or soup pot. Add in curry, cumin, coriander and red pepper, stir for about one minute. Assemble remaining ingredients (except for Crema and bread) and blend in pot. If you prefer silky smooth soup, run mixture in batches through a food processor. If you like a bit of texture, leave as is. Let soup heat through, and leave on slow simmer for about 30 minutes.
When done, remove from heat, put in serving bowls and top off with dollop of Crema and chopped parsley. Serve with crusty bread and a crisp green salad.
